Anchovies caught in the Cantabrian Sea and produced in Zumaya (Guipúzcoa, Basque Country) by the famous cannery Nardín.
Filets of good size prepared based on salted Cantabrian anchovy which thorns and skins are removed by hand.
Only the highest quality anchovies, the Engraulis Encrasicolus, bought in the Getaria fish market, are used directly from the fishermen who catch them in the Bay of Biscay.
They are fished at the optimum time with the fence, during the spring months.
