Bellota (acorn-fed) iberico pork ham, with 50% Iberian breed, entire on the bone 7/7.5 Kg Capa Negra, produced by Consorcio de Jabugo, from the village of Jabugo, in the region of Huelva (Andalusia).
It has deep and very persistent aromas, a magic flavor due to the Iberico’s high consumption of acorns and pastures in the Dehesas during the montanera (Its last winter).
The fat infiltrated into the meat gives an unmistakable flavor and an exceptional oiliness to this type of ham, also known as Pata Negra.
If you taste this Iberian “caviar” for the first time, it will marks the palate forever.
We advise to accompany it on a good bread and a good stained wine or the thin one, and overcoat it to savour to temperature ideal environment between 20 and 24ºC.
