Coming from the Galician estuaries, these cockles are preserved in brine with water, lemon and salt : a perfect aperitif.

On the finest sandy beaches of the Rías Baixas in Galicia, cockles grow, feeding on the abundant plankton of these extraordinary waters, so suitable for life.

Each year they are collected by hand by the shellfish harvesters on foot, at low tide, and by sailors afloat from small boats, with traditional methods.

The cannery Valcárcel chooses them from an area of the Rías Baixas of special qualities for this species, the Ria de Noia. It makes them with the experience of generations, preparing them to the natural, so that they transmit to us all the subtle aroma of the sea in its delicate and fragile flesh.
