Mussels from Galicia strictly selectionned by sizes and fresh packed. The byssus (the beards with which the mussel is attached to the rock) is removed by hand in each piece. These mussels, packaged by hand, are fried in olive oil. A practice that reduces their weight but considerably improves their texture and flavor.
